Hey guys.

recent purchaser of a '97 metro 3cyl 5spd and loving it. I drained the water and replaced it with coolant. But now it won't stay in. I burped the system, so I thought. So I don't know if I'm just not getting all the air out or what. It only poors out when I'm on the throttle. When the radiator cap is on, it comes out the reservoir, but if the cap is off it comes out there. Help?

possibly a blown head gasket :( have it checked for combustion products in the coolant(take a coolant sample into a shop and ask for them to check it).

Restart your checklist with having the rad cap checked for pressure at a garage. How is the coolant temp? Within range? Since you mentioned, it only happens when throttling hard, could be thermostat secondly. After the preliminary is ruled out, then dig into the deeper issues.

That's the same thing my Subaru Outback did when the head gasket went. With the radiator cap off, full of water, when I start up the car, put it in gear, and give it the gas, the water would shoot out of the radiator like a geyser.

Sounds like the combustion gases are escaping into your cooling system and blowing out all of the coolant. That'll call for a new head gasket and possible resurfacing of the cylinder head. Wouldn't hurt to check the block deck for warping as well.
