Radiator fan wont start when engine is hot! HELP!

Anyways so I unplugged the thermostat switch on the housing while the car was on and the fan started up.
OK. Now I'm confused. Your fan turns on with the connector unplugged, as quoted?

I just checked my 91. Unplugged nothing. Jumper the harness connector, like with a paper clip, and the fan turns on.

Something funny going on here.......................

Yeah... thats the one I unplugged and the fan just stays on when I do that the check engine light comes on when its unplugged too. But when its plugged in the fan does kick on at all and the check engine light is off.

Chances are its as Alpine stated (your thermostat) but not if the car is getting up to operating temp on your temp guage, or the sensor.

Are you getting voltage at the fuse and the relay? I'll be willing to be that when the fan motor died, it took out the fuse, and maybe the relay too. If you have replaced those two items like you said, then you probably have a bad wire somewhere in between the fan and the fuse/relay. Keep going back through the circuit until you find 12 volts. Find where the voltage stops, and that's likely where your problem lies.
