Here is a recipe I have used several times in the past:

Crustless Pumpkin Pie

15 oz. canned pumpkin
2 eggs (or equivalent Egg Beaters, etc)
12 oz. can evaporated skim milk
1/2 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves

In a medium bowl, mix pumpkin, eggs, sugar and spices.
Add evaporated milk and mix well.
Pour into 9 inch pie pan sprayed with non-stick coating.
Bake at 350 degrees for approximately 1 hour.

(Note: I use a LOT more spices than this calls for. And I like nutmeg, which I use even though the recipe calls for none. If I had to estimate, I use at least 2 Tbsp. cinnamon in the pie itself, and sprinkle more on top until it looks good. Not quite as much nutmeg, but a fair amount of that too. As always, season to taste!)

I have actually been collecting ingrediants to make my first pumpkin pie. Never heard of a crustless one.

All of the pumpkin-y flavor, none of the hassle of crust!
You don't have to buy a frozen shell, or make your own pastry, or anything! :D
I like it because there isn't anything fiddly.
Dump everything in a bowl and mix it, dump *that* in a pie pan, shove in the oven.
Don't even have to adjust the temp... which always bothered me about most pumpkin pie recipes.
"400 for 15 min and then 350 for the rest of..." GAHHHH COMPLICATED! :banghead

I see a lot of choices up there that are better than pumpkin, but the question is which one on Thanksgiving Day. The bare glimmer of traditionalist in me pushes pumpkin over the top for that specific circumstance.

Good observation. Two ways to look at it I suppose, traditional feasting options or preference. Actually when I made the poll I was thinking preference.

I like almost all of them (pecan being the exception). Tradition wise the pumpkin would be my Thanksgiving choice but if w're going by flavor then it's Cherry all the way!

Pecan pie is traditional and i do like it. I just love me some Lemon pie better, my Grandmother made that a tradition to have lemon pie for us at her house on Thanksgiving I try to carry on that tradition since her passing
