Car no start; Positive battery cable

Got in my car the other morning, and put the key in. Got the normal beeping from having the key in. Turned it over and nothing.
I started by jiggling the battery cable and it started beeping again because I had the key in and the door open. Went to turn it over and everything went dead again.
I took the positive battery terminal loose and cleaned it really good.
Long story short, I ended up having to strip the shield and cut the copper off about half an inch on the engine wiring harness to get good copper.

Does anyone know why I am getting this corrosion? this is the second time I have done this in about 4 months.
What I had hooked up to the positive lead is the wiring harness, fog lights, and a phone charger.

Is there something wrong electrically for the car to get that much corrosion?

I'd check/clean all the grounds in the engine compartment. Secondarily, how old is your battery? The older a battery gets the more it seems to outgas and corrode.
