Yes I did read it, but I'm not just wanting to disable it I want to take every piece of it out all the way down to the a/c, button. Mostly so someone else could use it, if it were broken I'd just cut the lines and undo the bolts.

Ok...so first...is there any freon left in the system? Is the compressor still good?
if so make sure you use something like duct tape to cap off all open ends...
There are three bolts holding the compressor to the bracket, these should be 12mm bolts
Then three bolts holding the bracket onto the block, these should be 14mm bolts
the lines are easy to remove, mostly 10mm bolts holding everything else...
the condenser core and fan and drier come out easier if you remove the front bumper, and then your going to need a block plate to take their place...
the evap core will remove easy refer to ; http://geometroforum.com/topic/8111407/4/#new starting at post #47
remove the VSV from the bulkhead/firewall and cap off the vacuum hose tips with some vacuum plugs...
remove the under hood wiring harness and the relays from the power distribution box under the hood near the Battery
the wiring harness goes thru the top of the right side fender and through the kick panel...remove the kick panel cover and there will be a quick connect...
the inside wiring goes all the way to the fuse box with the switch and the ac amplifier which is hooked to the evap case...again make sure to cap off the open cores...
your going to need the box that replaces the evap core box or try to make one up...
make sure to plug up the holes in the bulkhead/firewall...as well as the right kick panel ...
thinking that about covers it...others will most likely chime in if I missed something

Also my metro came from the factory with a wiper and defroster is there a way to delete those from the loom, I had to replace the hatch and I couldn't find one in my area with the wiper and defroster.

Defroster wiring was standard on most Metros, even ones without a defroster.

I didn't know that. But the wiper wiring didn't? I kept the harness out of the original hatch because it had the speaker wiring and the replacement hatch didn't. Was it standard to have two window washer pumps?

you wouldn't happen to have the accelerator switch? Its on the gas pedal attached to a green connector for 5 speeds.

There's also a piece of metal that shields the engine from debris where the evaporator core would go.

Interior wise there's a tube that goes in place of the evaporator core.

Source: I just equipped my 91 with ac! LOL!
